Oxtail is the culinary name for the cow tail.  Back in the day, oxtail came from the tail of an “Ox” i.e., a male, steer, trained to work on the farm hence the name. Nowadays oxtail is sourced from cattle of any sex.  Our oxtail is cut through the core to make eating is more convenient, rather than big chuck pieces. Oxtail is a gelatin -rich meat, which is usually slow-cooked as a stew or braised.
